“Canned by Hand.” For authentic tinned fish you can’t get any closer to the water than this. Wildfish in Klawock, Alaska is a third generation family-owned cannery, shipping smoked and salted pantry staples around the globe. We returned to the roots of the local canning industry, and found something both modern and scalable for owner and Chef Mathew Scaletta as he experiments with small batches from local catches.
